According to scientist Bill Lembeck, there are 49 million bubbles in a champagne bottle. According to Bruno Dutertre, there are 250 million bubbles per bottle. Sit back and start counting.

Lime straw edge. Very fine mousse, fresh crisp citrusy palate, clean slightly brioche like, needs time evolving well, still a little youthful.

Lemongold colour, suggesting some development in the bottle. Very fine mousse, rich, vinous, some brioche notes, still fresh despite aldehydic whiffs.

Green-flecked pale straw. Lime mineral and grapefruit pith aromas, fine very elegant mousse some yeasty, bready notes managed with great restraint refined with a truly mineral finish.
