Minced beef quiche

Ingredients

  • 250g of beef mince
  • 1 onion diced medium
  • 1 tablespoons of oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of ground black pepper
  • 3 eggs
  • 1/2 cup of milk
  • 1/2 cup of mayonnaise
  • 1 cup of cheddar cheese grated
  • 1 cup of Swiss cheese grated
  • 1 sheet of puff pastry uncooked

Instructions

  1. Heat the oil in a frypan. Cook the minced beef and onion until the beef is browned and the onion is soft, remove from the heat.
  2. Stir in the salt, oregano, garlic powder and pepper.
  3. In a bowl, beat the eggs, milk and mayonnaise together, then stir into the meat mixture. Fold in the cheeses.
  4. Line a lightly greased 23cm pie plate with the sheet of puff pastry. Pour in the mince mixture.
  5. Bake uncovered at 190 degrees C for 40-45 minutes, or until it is golden and puffed in the centre.
  6. Rest for 5 minutes before cutting.

Ingredients

  • 1 tablespoon of olive oil
  • 1 large red onion, finely chopped
  • 2 celery sticks, trimmed, chopped
  • 2 garlic cloves, crushed
  • 1 tablespoons of finely grated fresh ginger
  • 2 fresh long green chilies, deseeded, finely chopped
  • 1 tablespoon of brown mustard seeds
  • 2 teaspoons of ground coriander
  • 2 x finely chopped tomatoes
  • 325ml of water
  • 2 x 400g of cans red kidney beans, rinsed, drained
  • 350g of sweet potato, peeled, chopped
  • Pinch white sugar
  • 8 pappadums
  • Fresh small coriander leaves, to serve

Instructions

  1. Heat oil in a saucepan over medium heat. Cook onion and celery, stirring occasionally, for 5 minutes or until soft. Add the garlic, ginger, chili, mustard seeds and coriander. Cook, stirring, for 1 minute or until aromatic.
  2. Add tomato and water. Bring to boil. Reduce heat to low and simmer for 10 minutes. Add beans and sweet potato. Simmer, covered, for 25-30 minutes or until potato is tender and curry is thick. Season to taste with pepper and a pinch of sugar.
  3. Microwave pappadums following packet directions. Serve curry with papadums and sprinkled with coriander.

Ingredients

  • 500g of beef mince
  • 1 carrot, grated
  • 3 celery stalks, finely chopped
  • 1/4 cabbage, shredded
  • 2 onions, sliced
  • 3 tablespoons of rice
  • 1 teaspoon of curry powder, levelled
  • 45g of chicken noodle instant soup
  • 1 tablespoon of oil
  • 1 pinch salt and pepper, to taste

Instructions

  1. Heat the oil in a pan and brown mince, celery, and onion.
  2. Make up the chicken noodle soup according to packet directions in a large saucepan.
  3. Add the mince mixture, rice, curry powder, pepper and salt into the soup.
  4. Simmer for 10 minutes, stirring occasionally to avoid catching on pan.
  5. Add carrot and cabbage and simmer for a further 8 minutes, or until carrot and cabbage are cooked.

French onion chicken drumsticks

Ingredients

  • 1 tablespoon of vegetable oil
  • 1 onion, sliced
  • 400g of canned chopped tomatoes
  • 1 tablespoon of soy sauce
  • 1/2 cup of water
  • 1 teaspoon of thyme
  • 40g of French onion soup mix
  • 8 chicken drumstick

Instructions

  1. In a small saucepan heat the oil and gently fry the onion until it is transparent.
  2. Remove from heat and add soy sauce, soup mix, tomatoes and water. Stir to combine.
  3. In the slow cooker place the drumsticks so that the heavy ends are all on the bottom.
  4. Pour over the sauce mix and gently move the drumsticks around until they are all coated.
  5. Cook on low for 8 hours.
  6. Serve with steamed veggies and rice.

One-pot lasagna soup

Ingredients

  • 1 tablespoon of extra virgin olive oil
  • 1 brown onion, finely chopped
  • 400g of beef mince
  • 2 garlic cloves, crushed
  • 2 tablespoons of plain flour
  • 2 tablespoons of tomato paste
  • 500g jar of tomato pasta sauce
  • 1l of chicken style liquid stock
  • 5 dried lasagna sheets
  • 2 tablespoons of milk
  • 2 tablespoons of chopped fresh flat-leaf parsley leaves, plus extra to serve
  • 2 tablespoons of chopped fresh basil leaves, plus extra to serve
  • 1/2 cup of grated mozzarella
  • 1/4 cup of finely grated parmesan

Instructions

  1. Heat oil in a large, heavy-based saucepan over medium-high heat. Add the onion. Cook for 5 minutes or until softened. Add the mince. Cook, breaking up lumps with a wooden spoon, for 6 to 8 minutes or until browned. Add garlic. Cook for 1 minute or until fragrant. Add flour and tomato paste. Stir to combine. Add pasta sauce and stock. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 15 minutes or until thickened slightly.
  2. Break up lasagna sheets into 6cm pieces. Add to soup. Simmer, stirring occasionally, for 10 minutes or until pasta is tender. Add milk, parsley and basil. Stir to combine. Season with salt and pepper.
  3. Ladle soup among serving bowls. Top with mozzarella, parmesan and extra parsley and basil. Serve.

Budget tomato and bacon rigatoni with garlic bread

Ingredients

  • 1 packet of rigatoni pasta
  • 1 packet of garlic bread
  • 8 slices of fat-free rindless shortcut bacon rashers, cut into strips
  • 1 bottle of pasta sauce
  • 1 tin of Italian-style canned diced tomato

Instructions

  1. Preheat the oven according to the garlic bread packet directions.
  2. Bring a large saucepan of water to the boil over high heat and add the pasta. Return to the boil and cook for 13 minutes. Drain the pasta and return to the saucepan.
  3. While the pasta is cooking, place the garlic bread in the oven and cook for 14 minutes.
  4. In a medium non-stick frying pan, cook the bacon over medium-high heat for 3-4 minutes.
  5. Add the pasta sauce and diced tomato to the frying pan and bring to the boil. Reduce the heat to medium-low and simmer for 5 minutes.
  6. Transfer the sauce to the saucepan and toss with the pasta. Serve in bowls with the hot garlic bread on the side.
