Recipe of the day: Delicious chocolate Romany creams

It is the season for biscuits and dunking. Autumn has crept into many parts of South Africa and many us of are indulging in treats that will go well with a good cup of coffee such as Romany creams.

Certain biscuits even rusks can be deliciously homemade and you don’t have to buy them in the store. 

Romany creams, and tasty chocolate biscuits sandwiched together with chocolate spread have become a pantry staple in some households. They are great as snacks, especially when hosting or during a tea time break.

Ingredients

Scale
  • 225 grams of butter at room temperature
  • 1 cup (200 grams) of castor sugar
  • 1¾ cups (245 grams) of plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt optional
  • 1½ cups (150 grams) of desiccated coconut
  • ½ cup (50 grams) of cocoa powder
  • ½ cup (125ml) of hot water
  • 150 grams of milk chocolate

Instructions

  1. Preheat oven to 180°C.
  2. Place the butter and sugar into the bowl of a food processor and blend until creamy. Transfer the creamed butter and sugar to a mixing bowl.
  3. Sieve the flour, salt, baking powder and cocoa into the butter mixture. (mixture: 1¾ cups / 245 grams plain flour,1 teaspoon baking powder,½ cup / 50 grams cocoa powder,½ teaspoon salt.)
  4. Add the water ½ cup / 125ml  and 150 grams desiccated coconut
  5. Mix until well combined and all the flour has been incorporated. The mixture should come together into a dense ball.
  6. Line two large baking sheets with parchment paper. This will prevent the cookies from sticking to the trays.
  7. Take a teaspoon of dough, form it into a flat oval shape (approximately 5ml thick) and place it on the baking tray.
  8. Place the baking trays in the preheated oven and bake for 12 to 15 minutes until the cookies are done.
  9. Remove from the oven and allow to cool. The cookies will harden on cooling.
  10. Melt the chocolate in the microwave and use it to sandwich the cookies together. If you prefer you could just drizzle single cookies with chocolate instead.
