How to make a Bacon and vegetables quiche

Ingredients

  • 1 onion finely chopped large
  • 6 bacon rashers diced
  • 350 g broccoli cut into pieces small
  • 1 zucchini grated
  • 2 carrots grated
  • 45 g French onion soup mix
  • 1 capsicum finely chopped small
  • 60 g butter
  • 1 cup corn cob kernels
  • 1/2 cup cheese
  • 1 cup cream
  • 6 eggs extra large

Method

  1. Preheat oven to 180C (fan forced).
  2. Melt butter in a large pan over medium heat. Add onion and bacon, cook until onion is soft and bacon is starting to brown.
  3. Add broccoli, capsicum, corn, carrot and zucchini. Cook until vegetables have started to soften. Turn off heat and allow to partly cool.
  4. Add in cracked pepper and soup mix. Blend in well. Add cream, eggs and tasty cheese, mix well and pour into large baking dish.
  5. Cook for approximately 45 minutes, or until starting to brown on top.

Notes

You can adjust measurements of vegetables to suit your taste, or add more or less bacon.
