Zest of 1 large pink or red grapefruit (preferably organic)
1/4 cup chopped fresh ginger
3/4 cup mild-flavoured honey
1 cup freshly-squeezed pink or red grapefruit juice
Carbonated water, for serving
Instructions
Combine the grapefruit zest, grapefruit juice, honey, and ginger in a small saucepan over medium heat. Boil for 2 minutes, stirring to dissolve the honey.
Remove from heat and let cool. Strain the syrup through a sieve into a clean container and discard the solids.
To serve, spoon 2 tablespoons of syrup into one glass, top with carbonated water, and stir to combine. Taste and add more syrup, if desired.
Combine sugar and 2 cups water in a saucepan over medium heat. Bring to a boil and stir until sugar has dissolved. Remove from heat and cool to room temperature.
Strain the lemon juice through a fine-mesh sieve into a 2-quart pitcher. Add simple syrup and stir to combine. Refrigerate until cold.
When ready to serve, add 2 ½ cups of cold water and stir. Taste, and add more water if it’s too sweet. Serve over ice, if desired.
