Recipe: Herbed mielies

A classic South African side dish with a new twist.


Ingredients

4 large mielies
2 tbsp flat-leaf parsley, finely chopped
½ tbsp chives, finely chopped
1 tbsp basil pesto
1 tbsp water
½ tsp pepper

Method

1. Cut the mielies in half and either boil until tender or cook on the braai.

2. In the meantime, mix the herbs, pepper, water and pesto in a bowl.

3. Once the mielies are ready, place on a clean working surface. With a basting brush, brush the herb mixture over the mielies.

4. Place in a serving dish and serve hot.
