Take it easy today in the kitchen and prepare these delicious, quick and easy cranberry brie bites, as well as baked feta bites.
These yummy treats can be served as starters at your festive lunch or dinner parties, or can be served as a side dish.
Cranberry brie bites
Ingredients
1 tube of crescent dough
Cooking spray, for pan
Flour, for surface
1 wheel of brie
Half a cup of whole berry cranberry sauce
Quarter cup of chopped pecans
6 sprigs of rosemary
Instructions
Preheat oven to 180°C and grease a mini muffin tin with cooking spray. On a lightly floured surface, roll out crescent dough, and pinch together seams. Cut into 24 squares. Place squares into muffin tin slots.
Cut brie into small pieces and place inside the crescent dough. Top with a spoonful of cranberry sauce, some chopped pecans and one sprig of rosemary.
Bake until the crescent pastry is golden, about 15 minutes.
1 tablespoon of fresh thyme leaves, plus more for garnish
Half medium shallot, minced
Kosher salt
Lemon zest, for garnish
Instructions
Preheat oven to 180°C and adjust oven rack to centre position. Roll out crescent dough and pinch together seams. Using a chef’s knife, cut into 24 squares; lengthwise into quarters and crosswise into sixths. Grease mini muffin tin with cooking spray and place squares into muffin tin slots.
Fill each square with a piece of roasted red pepper, a cube of feta, and a sprinkle of thyme leaves and shallots. Season bites lightly with salt.
Bake until dough is cooked through and golden, 15 to 17 minutes. Let it cool for 5 minutes, then transfer to serving platter and top with more fresh thyme leaves. Grate a light layer of lemon zest over the bites and serve.
