31 Days of Christmas: Grilled BBQ chicken and Russian kota recipes

The kota, a slightly different version of the bunny chow, is a popular street food in both Soweto and other parts of Gauteng.

Kota comes from the word “quarter”, referring to the quarter of a loaf of bread that is used as the base for this delicious dish. The bread is hollowed out and then filled with a filling of your choice, as well as deep fried chips.

While a bunny chow is half a loaf of bread filled with curried lamb, chicken or vegetables, the kota can be stuffed with any ingredient your tastebuds desire.

We found two of our favourite kota recipes you can try this weekend or during your December holiday. It’s quick and easy to make, and everyone will love it!

Grilled BBQ chicken and bacon kota

Ingredients

  • Quarter loaf of white bread
  • 120g chicken breasts
  • 1 tablespoon of chicken spice
  • 120g frozen chips
  • 130ml BBQ marinade
  • 4 slices of streaky bacon
  • Half an onion, sliced
  • 2 slices of cheese
  • 15ml atchaar
  • Salt for seasoning
  • Oil for frying

Method

  1. Cut the bread into a quarter loaf and remove a section of the inside.
  2. Cut the chicken breasts into bite size pieces.
  3. Season the chicken breasts with chicken spice and place on a hot grill until cooked. Place the cooked chicken into the marinade.
  4. Pan fry the streaky bacon and onions until golden brown.
  5. Deep fry the chips until golden, season with salt.
  6. Place the chips and chicken, cheese, bacon and onions into the quarter loaf and drizzle with extra BBQ sauce and atchaar.

Russian kota

Ingredients

  • Quarter loaf of white bread
  • 15ml athaar
  • 120g chips
  • 1 tsp BBQ seasoning
  • 2 slices of polony
  • 2 slices of cheese
  • 1 Russian sausage
  • Mayonnaise
  • Oil for frying

Method:

  1. Cut the bread into a quarter loaf and remove a section of the inside.
  2. Boil the Russian sausage for 3 minutes until cooked, once heated through pan fry until crispy.
  3. Fry the chips and season with BBQ salt
  4. Layer your quarter with french fries, polony, cheese, Russian sausage and top with atchaar and mayo.
