Try this crunchy, healthy salad anytime you have leftover turkey or chicken.

Ingredients
⅓ cup light mayonnaise
2 tsp Dijon mustard
¼ tsp salt
¼ tsp ground pepper
1 cup shredded cooked turkey or chicken
1 Granny Smith, chopped
1 cup seedless red grapes, halved
½ cup chopped walnuts
12 large butterhead lettuce leaves
Method
1. Combine mayonnaise, mustard, salt and pepper in a medium bowl.
2. Add turkey (or chicken), apple, grapes and walnuts; toss to coat.
3. Line 4 small plates with 3 lettuce leaves each.
4. Divide the salad mixture among the plates.
