Recipe of the day: Delicious ham and cheese stuffed chicken breasts in the air fryer

If you are looking for a somewhat healthy, but still delicious and tasty dinner idea, these mouth-watering stuffed chicken breasts with ham and cheese will hit just the right spot.

Depending on your weight goals and preferences, serve your chicken breasts with sweet potato fries and a garlic mayo dipping sauce, or a crunchy side salad.

Ham and cheese stuffed chicken breasts

Ingredients

  • 1 boneless chicken breast
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp Italian seasoning
  • 1 slice Cheddar cheese
  • 1 slice ham
  • 2 slices tomato
  • 2 toothpicks or metal skewer
  • Cooking spray

Method

  1. Cut the chicken breast horizontally with a sharp knife to make a pocket, making sure not to cut through the whole way.
  2. In a small bowl combine salt, garlic powder, and Italian seasoning. Season the chicken all over, inside and out, evenly.
  3. Stuff the chicken breast with Cheddar cheese, ham and tomato slices.
  4. Use toothpicks or a skewer to close the pocket.
  5. Spray the chicken breast on both sides with cooking spray.
  6. Place the chicken breast in the air fryer basket (on top of the crisper plate if your air fryer has one).
  7. Set air fryer temperature for 180°C and timer for 20 minutes.
  8. When finished, check if the meat is cooked thoroughly. I not, cook for another 3 – 5 minutes more if necessary.

Garlic Mayo dipping sauce

Ingredients

  • ½ cup sour cream * I use low-fat
  • ¼ cup cup mayonnaise * I use Hellman’s low-fat
  • ½ cup Dijon mustard
  • 2 tbsp fresh chives finely chopped
  • 4 tbsp fresh lemon juice
  • 3 tsp white wine vinegar
  • ½ tsp white granulated sugar
  • ¼ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ¼ tsp white pepper
  • ¼ tsp cayenne

Method

  1. Mix it all together in a small bowl!
  2. For best results, refrigerate for 30 minutes to allow the garlic to blend in (optional).
