Recipe: Dry aged sirloin with mushrooms

Chef Alex Webber whipped up this dish for a whiskey and food pairing event at Workshop 55.


Ingredients

150g mixed frozen berries
1 tsp each chopped thyme, rosemary and garlic
½ brown onion, chopped
1 potato
200g brown open mushrooms
Fresh cream
Punnet strawberries
Dry aged sirloin

Method

1. In a saucepan, bring frozen berries and rosemary to the boil until slightly reduced.

2. Blend and strain through a fine sieve. Place in a container in the fridge.

3. Sauté the onions, garlic and thyme, then add mushrooms and seasoning. Cook until water from mushrooms is reduced.

4. Blend the contents with a splash of cream. Strain through a fine sieve and place in fridge to cool.

5. Peel and cube potato, and boil in salt water until tender. These will be deep fried and served with the dish.

6. Slice strawberries in half.

7. Season the beef and grill till medium rare.

8. Blend some red onion and mushroom, and sieve out any large pieces.

9. Plate as per image and serve with Maker’s Mark 46 Kentucky Whiskey.
