Recipe: Waffles with mature cheddar and truffle

A cheesy, savoury spin on waffles.


Ingredients

250ml (1 cup) milk
80g cubed butter
250g cake flour
10ml (2 tsp) baking powder
3ml (½ tsp) salt
3 eggs, separated
15ml (1 tbsp) fresh thyme leaves
150g mature cheddar, grated + extra, to top
Few drops truffle oil olive oil, to grease
Micro basil leaves, to serve

Method

1. To make savoury waffles, add the milk and butter to a pot. Bring to the boil and remove from heat when the butter has melted.

2. Sieve the cake flour, baking powder and salt into a large bowl. Whisk 3 egg yolks (reserving the whites) into the warmed milk mixture. Add the milk mixture to the dry ingredients and fold through gently.

3. Whisk the reserved 3 egg whites until stiff peaks form, before folding gently into the batter. Stir fresh thyme, mature cheddar and truffle oil through the batter.

4. Heat a little olive oil in a waffle pan on medium-low heat and spoon about 100ml of the batter into the pan. Close the waffle pan and cook until browned on both sides, about 2 – 3 minutes per side. Repeat this step with the remaining batter.

5. Serve topped with grated cheddar.
