Quench your thirst with a strawberry mojito

A non alcoholic drink to entertain guests this Spring.

IT’S Spring Day!

Get ready for the sizzling Zululand sunshine, but fear not, here is a refreshing non alcoholic virgin mojito using strawberries and mint.

Ingredients

200 g strawberries, with crowns removed

A handful of mint or basil

4 nice leaves of your herb of choice to garnish

Juice of half a lemon

90 g sugar

90 ml ordinary water

500 ml sparkling mineral water

ice cubes

Instructions

• Mix the sugar, lemon juice and 90 ml of water into a syrup and bring to the boil. Allow to cool quickly in a cold bain-marie.
• Crush ice cubes by wrapping them in a clean tea towel and hit it against the worktop. Then store them in the freezer until you are ready to serve the cocktails.
• Cut the strawberries into slices and place them in a big bowl or mortar along with the herb leaves.
• Use a pestle, or possibly the round side of a ladle, to finely crush the strawberries and leaves.
• Divide the strawberry and herb pulp between four tumblers.
• Divide the syrup between the glasses.
• Add crushed ice until two-thirds full.
• Top up the glasses with the sparkling water.
• Garnish with the separate leaves.
