With winter creeping in, there is nothing like a warm malva pudding to warm you up.
Enjoyed with custard, ice cream, cream, or even on its own, this delicious dessert is sure to fill you with all the warmth you need.
Ingredients:
Pudding:
· 4 eggs
· 500ml sugar
· 2T apricot jam
· 600ml flour
· 2 teaspoons bicarb
· Pinch of salt
· 2T margarine
· 200ml milk
· 2 teaspoons of vinegar
Sauce:
· 400ml cream
· 400g sugar
· 200g margarine
· 200ml of water
Method:
Pudding: Preheat oven to 180 degrees Celsius. In a bowl, mix the eggs and sugar. Add apricot jam and blend well. Set aside.
In a separate bowl, sift flour, bicarb and salt together and set aside.
Heat the margarine with the milk until melted, then add the vinegar and allow to cool.
Add half the flour and half the milk mixture to the egg mixture and blend well, then add remaining flour and milk and mix again.
Pour into a buttered dish and bake for 45 minutes.
Sauce: Boil all the ingredients for 5 minutes. When the pudding is cooked, remove from oven, prick with a fork and pour hot sauce over the top. Serve with custard or cream.
