Mysore Pak is a sweet dish of Karnataka, prepared especially during Diwali. The traditional softy taste lies in the perfect blending of ingredients in low heat. For this, you need lots of ghee. Before you prepare Mysore Pak, visit your local Spar for a special promotion on ghee. Here’s a recipe for Mysore Pak:

HEAT GHEE AND OIL

  1. In a large kadai, add 1 cup ghee and 1 cup oil.
  2. Put to a boil and simmer until you prepare Mysore Pak.

MYSORE PAK RECIPE

  1. In a large heavy bottom or non-stick kadai, boil 2 cups sugar and ½ cup
  2. Keep boiling and stirring until the sugar attains one string consistency.
  3. Keep the flame on very low and add 1 cup well sieved besan / gram flour / chickpea flour / kadle hittu little by little.
  4. Stir well, making sure there are no lumps and keep on stirring.
  5. Take a ladleful of hot ghee oil and pour over the besan mixture.
  6. Continuously stir until the oil is absorbed completely.
  7. Add ladlesful of hot oil ghee and stir until all the oil is absorbed. It will sizzle and start to froth at the top. Keep repeating 4-5 times till the mixture starts to separate from pan and the oil starts releasing from sides.
  8. Immediately, transfer the mixture to a deep greased tray. This helps to continue cooking and get golden brown colour in between.
  9. After 5 minutes cut into pieces as desired.
  10. After 30 minutes separate the pieces and serve your Mysore Pak!
