Here’s a delicious recipe to get your taste buds dancing:

South African Piri-Piri Chicken

Serves: 4

Preparation time: 3 hours

Cooking time: 30 minutes

  1. In a large bowl, whisk together:
  • Juice of two lemons
  • 15ml white vinegar
  • ¼ cup extra virgin olive oil
  • ½ onion, roughly chopped
  • 1½ teaspoon minced garlic
  • 5ml salt
  • 2½ml ground black pepper
  • 5ml cayenne pepper
  • 15ml chili powder
  • 15ml paprika
  • 5ml ground oregano
  • ½ teaspoon ground ginger
  1. Coat 1kg boneless chicken fillets with the above marinade. Cover with cling wrap and refrigerate overnight, or at least three hours.
  2. Preheat your oven to 180⁰C. Heat an oven-save skillet over medium high heat until very hot.
  3. Use tongs to transfer the chicken breasts from the bowl to the pan. Do not add the marinade.
  4. Brown the chicken on all sides for about 2-3 minutes per side.
  5. Pour the marinade into the pan and spoon the sauce onto the chicken pieces. Turn off the stove, and use oven mitts to transfer the pan to the pre-heated oven.
  6. Cook in oven for 15-20 minutes (depending on thickness of chicken breasts), or until cooked through.
