Here’s a delicious recipe to get you started:
Hearty Beef Soup
Ingredients
- 700g beef cubes
- 250ml soup mix
- 250ml red speckled beans
- 410g can butter beans
- 2l water
- 15ml olive or sunflower oil
- 1 finely chopped onion
- 1 small cabbage, shredded
- 3 sliced leeks
- 5 grated carrots
- 10ml dried thyme
- 10ml mustard powder
- Salt and black pepper
Instructions
Place beef cubes, red speckled beans, soup mix and water in a large pot, and bring to the boil.
Cook for an hour, or until the beans are soft.
In a separate pan, heat the oil and sauté all the remaining ingredients, except for the butter beans. Add it to the large pot and bring to the boil. Boil for 10 minutes and add salt and pepper to taste.
Mix in the butter beans just before dishing up.
