Spoil your dad with a tasty homemade meal on Father’s Day

This is the day of the year set aside to celebrate fathers

FATHER’S Day – the one day of the year reserved for dads to receive royal treatment – is fast approaching, and instead of racking your brain thinking of a thoughtful gift, why not treat him to a delicious meal instead.
They say the way to a man’s heart is through his stomach, and here are some mouth-watering mushroom dishes for any occasion.
Why mushrooms?
They are rich in selenium and research shows that this mineral can play a positive role in the prevention of prostate cancer.
So look no further, here are some simple, yet delicious mushroom recipes for you to spoil your special dad.

Mushroom, halloumi and yellow pepper skewers with mint salsa verde (serves four)

Ingredients
1/4 cup (60ml) olive oil
1 punnet (20g) fresh mint leaves (save a few leaves for garnish)
1 punnet (20g) fresh parsley
1 clove garlic, finely grated
Grated rind and juice of a lemon
Salt and pepper
250g portabellini mushrooms, whole or halved
250g halloumi cheese, cubed
2 medium yellow peppers, sliced into squares

Method
1. For the salsa verde: put the olive oil, mint, parsley, garlic, lemon rind and juice and some salt and pepper into a small blender. Blend to a smooth pulp. Cover and refrigerate until ready to serve.
2. For the skewers: assemble the skewers by arranging chunks of mushrooms, halloumi and yellow pepper together. Braai over hot coals or bake in a very hot oven at 220 degrees C for about 10 minutes until golden. Drizzle with salsa verde and serve at once.

Steak, mushroom and baby potato kebabs

Ingredients
16 baby potatoes
500g portabellini mushrooms
400g rump, rib eye or sirloin steak, sliced into 3cm cubes
2 lemons
¼ cup parsley, finely chopped
¼ cup oregano, finely chopped
¼ cup basil, finely chopped
¼ cup olive oil
Salt and pepper
1 clove garlic, minced
1 tbsp red wine vinegar

Method
1. Prepare your braai and allow coals or wood to burn down, or pre-heat a gas braai on medium.
2. In heavily salted water, parboil the baby potatoes. Once tender, drain and set aside to steam dry.
3. In a large bowl combine the mushrooms, steak cubes, juice of 1 lemon, parsley, oregano, basil, olive oil, garlic, red wine vinegar, salt and pepper. Add in the cooked potatoes. Toss to fully cover the steak and mushrooms. Allow to marinade in the fridge for 1 hour.
4. On a long kebab stick alternate the potatoes, mushrooms and steak pieces. Braai the kebabs until meat is done. Braai the second lemon alongside them until charred. Serve kebabs with a squeeze of grilled lemon and a sprinkle of sea salt flakes.
