Here’s the secret ingredient for your summer salad

No braai is complete without a salad, and so long as mangoes are around, you can get really creative with what you serve up in that salad bowl

BRAAIVLEIS and sunny skies… now all you need is to prepare the salad. And the best ingredient for a summer salad in South Africa is the mango!

Enjoy the warm weather while it lasts by concocting this delectably zesty mango and noodle salad, packed full of goodness.

As well as being delicious, mangoes are full of vitamins A, B1, B6, C, as well as biotin and mineral potassium.

They’re also free from fat, sodium and cholesterol.

Don’t be put off by the long list of ingredients, this recipe is definitely worth a try!

Mango and Noodle Sesame Salad with Asian flavours
Serves 8
Preparation Time: 25 minutes
Cooking time: 15 minutes (for noodles)
Total time: 40 minutes

Ingredients
· 2 large mangoes, sliced
· 300g dried rice noodles
· 1 cup of red cabbage, very finely sliced
· 1 carrot, sliced into ribbons
· 2 large handfuls of bean sprouts
· 4 spring onions, finely sliced
· 1 handful of mint leaves
· 1 handful of basil leaves
· 1 handful of coriander leaves
· 2 heaped tablespoons of salted peanuts
· 2 tablespoons of hulled sesame seeds, toasted
· 1 tablespoon of black sesame seeds

For the noodle dressing:
· 4 tablespoons of lemon juice
· 4 teaspoons of fish sauce
· 1 garlic clove (crushed)
· 1 tablespoon of sweet chilli sauce

For the spicy peanut dressing:
· 125g of smooth peanut butter
· 1 teaspoon of garlic powder
· 1 ½ teaspoons of ground ginger
· 1 teaspoon of dried chillies
· 1 ½ teaspoons of soy sauce
· Juice of 2 limes
· 1 teaspoon of wine vinegar
· 180ml of water

Method:
1. To make the dressing for the noodles: whisk together all the ingredients until the sugar has dissolved. Then whisk in four tablespoons of cold water and set aside.
2. Place the noodles in a large, heatproof bowl and cover with boiling water. Leave to soak for 15 minutes until soft. Drain, rinse well under cold water and drain again. Once cool and completely drained, toss the dressing through the noodles and set aside.
3. To make the spicy peanut dressing: whisk together the peanut butter, garlic powder, ginger, crushed dried chillies, soy sauce, lime juice and vinegar in a small bowl. Stir in the water until thoroughly mixed. Set aside.
4. Arrange the noodles on a platter and scatter over all the salad ingredients. Gently toss to combine. Serve with the peanut sauce.
