Lockdown baking without essential ingredients

Recipes that exclude eggs and butter

BECOMING bored during the 21-day lockdown is a given, but some people relieve stress by baking.

Here are some recipes that do not need many essential ingredients to get the job done.

So don’t put away your mixing bowl just yet.

Delicious doughnuts

Ingredients – 3 cups self-raising flour and plain yogurt.

Method – Mix self-raising flour with yogurt until soft and sticky. Leave to stand for three hours before shaping and frying it in deep oil.

Nothing like fresh dinner rolls to add to your favourite meal

Dinner rolls

Ingredients – 1 cup flour, 1 teaspoon baking powder, 1 teaspoon salt, half a cup of milk and 2 tablespoons mayonnaise.

Method – Combine all ingredients, spoon into a greased muffin pan and.cook in pre-heated oven at 180 degree for 15 minutes, or till done and golden brown.

Scones remain an all-time favourite



Scrumptious scones

Ingredients – 2 cups flour, 4 teaspoons baking powder, 125 grams butter, quarter cup castor sugar, three quarter cup sour milk and pinch of salt.

Method – Pre-heat oven to 160 degrees. Rub together flour, baking powder, salt, sugar and butter to form breadcrumbs. Add sour milk to make soft dough.

Pat on floured board approximately 2cm thick and cut with a scone cutter.

Place onto a floured baking tray. Coat top of scones with milk and bake for approximately 20 minutes.
