Ingredients
2kg pork ribs, cut in half lengthways
MARINADE:
1 cup tomato sauce
2 tsp chilli flakes
2 tsp tamarind paste
50g golden brown sugar
2 Tbs brown vinegar
1/4 cup wholegrain mustard
Sea salt and ground black pepper
Method
Place the ribs in a large dish. Mix together the marinade ingredients and pour over the ribs. Allow to stand for 20 minutes.
Braai ribs until cooked through. Serve with fresh coriander and braaied mielies seasoned with chilli salt.
