Baked Chutney and Mayonnaise Chicken

Mayonnaise and chutney may sound like an unusual combination for a chicken casserole, but this saucy, flavoursome dish is much-loved and never fails to increase the appetite.

Ingredients:
1 (1 1/2 – 2 kg) whole chicken
1 (40 g) packet onion soup
250 ml boiling water
250 ml Mrs Ball’s chutney
250 ml mayonnaise
salt & pepper

Preparation Method:
1.  Rinse chicken, cut into portions & season with salt & pepper.
2.  Cut chicken into portions & season with salt & pepper.
3.  Place into ovenproof dish with lid.
4.  Mix the soup with boiling water.
5.  Add chutney & mayonnaise.
6.  Mix together.
7.  Pour mixture over chicken pieces, cover with lid & bake in a 180°C oven for 1 hour.
8.  Remove lid after 1 hour.
9.  Bake further until chicken browns on top.
10. Serve with rice / vegetables / salad.
