Roast Beef Salad With Goat Cheese and Balsamic Vinaigrette

Deli roast beef and a dressing made with olive oil, balsamic vinegar, and Dijon mustard pulls together this simple salad.

Total Time 15 minutes Serves 4

Ingredients:
2 small heads Boston lettuce, torn into pieces
500g sliced deli roast beef
1 large tomato, cut into wedges
1/2 red onion, sliced
125g soft goat cheese, crumbled (substitute with feta or mozzarella)
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
salt and black pepper

Preparation Method:
Divide the lettuce, roast beef, tomato, onion, and goat cheese among bowls.
In a small bowl, whisk together the oil, vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Drizzle over the salad.
