Jelly Roll Ups – Jello Pinwheels

I love the look of these! Such simple idea but looks so cool! The kids love them and I think they are so fun to make.

Ingredients:
85g 1 packet of Jelly (any colour you prefer)
1/2 Cup boiling water
85g little mini Marshmallows or regular sized Marshmallows cut into pieces

Lightly spray an 20x30cm pan square or rectangular pan with non-stick cooking spray and make sure it is spread well up the sides also.

Method:
Stir together water and jelly crystals in a glass bowl until the jelly is completely dissolved.

Add marshmallows and microwave for 35 seconds or until marshmallows have just begun to puff. This is the key to a successful marshmallow layer! If you over cook the marshmallows, they just dissolve and your roll-up will not have two distinct layers.

Whisk quickly until marshmallows are dissolved.

Pour quickly into prepared pan and chill in fridge for 45 minutes or until well set. And this is where the cool bit happens! The marshmallow layer will rise to the top!

Remove the pan from fridge. At this point, the jelly should be very firm and easy to handle. Gently pull one side away from pan starting at one end, roll up tightly.

With seam side down, cut into 3cm slices. I find that it is easiest to cut this with some cotton or thread, just put cotton underneath then cross over to slice. Also be prepared for it all to be a bit sticky!

This needs to remain chilled until you serve.
