Lucky sweet & sour pork

Ingredients:
750g boneless pork sirloin, cut into bite size cubes
2 tablespoons Teriyaki Marinade & Sauce (if you can’t find Teriyaki sauce make your own, recipe below)
1 tablespoon minced fresh ginger
3/4 cup Sweet & Sour Sauce
3 tablespoons brown sugar
2 tablespoons syrup from jar of maraschino cherries
1 tablespoon Soy Sauce
1/4 cup Maizena
3 tablespoons vegetable oil, divided
1 green bell pepper, cut into bite size squares
1/2 onion, cut into bite size chunks
1 can pineapple chunks, drained
1/2 cup maraschino cherries, stemmed
Preparation:
1. Combine pork, teriyaki sauce and ginger; let stand 15 minutes.
2. Meanwhile, blend together sweet & sour sauce, brown sugar, syrup and soy sauce; set aside.
3. Coat pork with maizena. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat.
4. Add pork in single layer. Cook 4 minutes, or until golden brown, stirring to separate pieces. Remove pork.
5. Heat remaining 1 tablespoon oil in same pan. Add bell pepper and onion; stir-fry 2 minutes.
6. Add pork, pineapple, cherries and sweet & sour sauce mixture; cook, stirring, until sauce boils.
7. Serve with fried rice or egg noodles.

Homemade Teriyaki Sauce
Serves: about 1 cup
Ingredients:
½ cup soy sauce
¼ cup brown sugar
1½ teaspoons fresh ginger, minced
1 teaspoon garlic, minced
1 tablespoon honey
1 teaspoon sesame oil
3 tablespoons sherry
¼ cup water mixed with 3 teaspoons maizena
Instructions:
Combine all ingredients in a small saucepan, bring to a boil, reduce heat and simmer for about 4 minutes. Remove from heat and let cool.
Store in the fridge for up to a week.
