Grilled Chicken Breast Stuffed with Mozzarella

Something lite for a hot day that's low in fat and delicious.

Ingredients:
3 chicken breasts (skin and visible fat removed
3x42g of sliced mozzarella
1 baby marrow, halved and sliced
1 red pepper, roughly chopped
1 green pepper, roughly chopped
1 yellow pepper, roughly chopped
1 small red onion, quartered
3 cloves of garlic
handful of cherry tomatoes
mixed herbs

seasoning mix for chicken: black pepper, chilli flakes, parsley and oregano
Spray and cook

Method:
1.  Preheat oven to 200c

2.  Add baby marrows, peppers, onion, garlic and cherry tomatoes, to a roasting dish. Sprinkle with some mix herbs and spray with Spray and Cook, roast in the oven until vegetables are softened.

3.  Make a pocket in each of the chicken breasts with a sharp knife and stuffed each chicken breast with 42g of mozzarella.

4.  Rub the seasoning mix into each side of the chicken breasts to lightly coat.

5.  Preheat a grill pan, spray with a little spray and cook and add the chicken breast, cooking on both sides until nice and golden.

6.  Wrap in foil, add to an oven proof dish and add to the oven along with the roasted veggies until cooked through.

7.  Served the Grilled Stuffed Chicken Breasts on a bed of Roasted Vegetables.
