Lamb Wraps with Coriander and Sweet Chilli Pesto

Ingredients:
500g of Lamb Rumps
1 tbsp oil
½ cup coriander pesto
½ cup sweet chilli sauce
2 tbsp lamb seasoning mix
4 tsp sesame oil
30g salad leaves
¼ cup bean sprouts
½ red bell pepper, thinly sliced
2 spring onions, finely chopped
¾ cup mayonnaise
4 soft flour tortillas
Method
1. Heat a frying pan or wok.
2. Slice lamb rumps across the grain into small strips. Pan-fry quickly in oil for 2-3 minutes each side; remove from the heat.
3. In a separate bowl combine the coriander pesto and chilli sauce and set aside. In a clean bowl, mix together the cooked lamb, lamb seasoning mix and sesame oil.
4. Combine salad leaves, bean sprouts, red bell pepper and spring onions. Add the pesto mix and mayonnaise, toss gently until well combined.
5. Divide the mixture evenly between the centres of the tortillas and fold up burrito-style. Serve whole or cut diagonally.
