Recipe of the day: Stuffed peppers

Ingredients
• 8 Green peppers.

Stuffing

•  2 Slices white bread, crusts removed.
• 50ml Milk.
• 1 Onion chopped.
• 375mg Mince.
• 2 Eggs.
• Pinch of pepper.
• ½tsp Salt.
• ½tsp Red pepper.

Sauce
• 1 Onion.
• 2 Tomotoes.
• ½tsp Paprika.

Instructions
• At the stalk end of the peppers cut a 1cm thick slice and reserve.
• Cut out the pith, wash until all the seeds have been removed.
• Soak bread in milk, squeeze milk from bread.
• Combine bread, onion, mince, eggs, pepper, salt and red pepper.
• Mix well and place stuffing into peppers.
• Heat a 24cm roaster and place peppers with stuffing downwards and brown well.
• Turn peppers, add finely chopped onion, tomatoes, reserved pepper ends and paprika.
• Put lid on, turn heat down to low and cook for 40 minutes.
