Recipe of the day: ‘Oom Marius se Gunsteling Hoender Lewers’

Try this idea for a tasty meal tonight.

(Uncle Marius’ favourite chicken livers)

Ingredients
• 1 Large onion, chopped.
• 45ml Worcestershire sauce.
• 3 Cloves garlic crushed.
• 375ml Dry white wine.
• 400g Tomatoes peeled and diced.
• 2 Bay leaves.
• 1 Dash coarse black pepper.
• 1 Drizzle oil for frying.
• 15ml Ground paprika.
• 1 Red pepper finely sliced.
• 45ml Hot peri-peri sauce.
• 45ml Tomato Paste.
• 250ml Cream.
• 30g Butter.

Instructions
• Fry onions until soft.
• Add Worcestershire sauce, paprika, garlic and pepper and fry for a minute.
• Add wine, peri-peri sauce and chopped tomatoes and simmer for 10 minutes.
• Add tomato paste, bay leaves and cream.
• Season and set aside.
• Melt butter in a non-stick pan and fry livers until brown but still a little pink.
• Add livers to sauce and heat before serving.
