Thirty-minute meals: cauliflower mac and cheese

Homemade mac and cheese with cauliflower is a quick and easy dinner to prepare for weeknights that the whole family will love.

This is a great way to hide vegetables in a dish so the kids don’t know.

You will need:
* One and a half cups elbow macaroni.
* Half a cup cauliflower florets.
* Cooking spray.
* One tablespoon olive oil.
* One tablespoon all-purpose flour.
* Half a cup milk.
* One and a half cups grated Cheddar cheese.
* Half a tub cream cheese.
* Half a teaspoon salt.
* Ground black pepper.

What to do:
Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, eight minutes. Drain.
Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, five to six minutes. Place cauliflower in a blender or food processor; blend until smooth.
Coat a large saucepan with non-stick cooking spray; place over medium heat. Add oil and flour; cook, stirring constantly, until a thick paste forms, one to two minutes. Add milk; cook and stir until mixture thickens, three to four minutes.
Mix cauliflower, Cheddar cheese, cream cheese, salt, and pepper into milk mixture; stir until sauce is smooth. Fold macaroni into sauce.
