Malida
This crunchy, sweet treat is made from a rich dough, fried then crumbled and mixed with a milk syrup.
Serves six
Ingredients
1 cup Snowflake Wheat Semolina Flour
1 cup milk
1/2 tsp rose essence
2 cups Snowflake Cake Wheat Flour
2 tbs thick ghee
Ghee for deep-frying
Flaked almonds for decorating
For the milk syrup
1/2 cup milk
1/2 cup sugar
1/2 tsp ground cardamom
Method
- Place the semolina in a mixing bowl. Stir in the milk and rose essence. Leave for 10-15 minutes. Add the flour and rub in the ghee, by hand, until it forms a workable dough.
- Break the dough into marble sized pieces, flatten and fry until golden and crisp. Remove with a draining spoon and leave to cool.
- Prepare the milk syrup by combining the ingredients and boiling for three to five minutes, or until thick. Pour the syrup over the fried biscuits and leave until absorbed.
- Crumble the mixture into small pieces and sprinkle with almonds.
