Ramadan recipe: Malida

Expert baker, Asha Maharaj, bakes a little extra sweetness into Eid-al-Fitr with her take on traditional Eid treats.

Malida

This crunchy, sweet treat is made from a rich dough, fried then crumbled and mixed with a milk syrup.

Serves six

Ingredients

1 cup Snowflake Wheat Semolina Flour

1 cup milk

1/2 tsp rose essence

2 cups Snowflake Cake Wheat Flour

2 tbs thick ghee

Ghee for deep-frying

Flaked almonds for decorating

For the milk syrup

1/2 cup milk

1/2 cup sugar

1/2 tsp ground cardamom

Method

  1. Place the semolina in a mixing bowl. Stir in the milk and rose essence. Leave for 10-15 minutes. Add the flour and rub in the ghee, by hand, until it forms a workable dough.
  2. Break the dough into marble sized pieces, flatten and fry until golden and crisp. Remove with a draining spoon and leave to cool.
  3. Prepare the milk syrup by combining the ingredients and boiling for three to five minutes, or until thick. Pour the syrup over the fried biscuits and leave until absorbed.
  4. Crumble the mixture into small pieces and sprinkle with almonds.
