Addie staff in the kitchen: Ouma se souskluitjies (sweet dumplings)

Want to take a trip down memory lane to your granny's kitchen? Try this recipe for old-school, homemade souskluitjies.

STEP 1: Gather all the ingredients.

 

Ingredients: 

• About 150g butter (this should be melted)

• 5 cups of milk

• 5 eggs (separated)

• 5 tablespoons of all-purpose flower

• Salt

• Cinnamon

(Adjust measurements if and when needed)

Method:

STEP 2: Pour four of the five cups of milk into pot and gently heat until boiling.

 

STEP 3: Remember to separate the eggs. Put them in different mixing bowls as you will have to use both for this recipe.

 

STEP 4: Whisk all the egg yolks and mix with flower, sugar, salt and leftover milk.

 

STEP 5: Mix the mixture until smooth.

 

STEP 6: Slowly add the mixture to the milk on the stove. Keep stirring until well-mixed to avoid lumps.

 

STEP 7: Lower the heat of the mixture and whisk the egg whites until it forms soft peaks. Note: DO NOT over whisk.

 

STEP 8: Remove mixture from heat and slowly fold in the whipped egg whites into the mixture.

 

STEP 9: At the bottom of a large bowl, add a little melted butter and cinnamon sugar.

 

STEP 10: Use a large spoon to dish spoonfuls of the mixture into the bowl in single layers. Pour melted butter and cinnamon sugar over each layer before the new one is spooned on.

 

STEP 11: Repeat layers and add melted butter and cinnamon sugar each time.

 

STEP 12: When the mixture is finished, spoon butter and cinnamon sugar over the top. Leave to rest in the warmer drawer until ready to serve. Note: This is a dish best served warm. :)

 

STEP 13: Carefully dish up ‘souskluitjies’ into bowls with a little bit of the sauce. Note: As you may have noticed, the recipe does use a lot of butter, so try not to dish up too much butter, it should have absorbed slightly into the ‘kluitjies’.
