Addie staff in the kitchen: Roast Tomato Soup

Winter is definitely on its way and it's time to try out different warming soups. This one is sure to please.

This week we made a delicious tomato soup using roasted tomatoes and garlic.

While it takes a little longer than other tomato soup recipes, the effort and time are well spent to make this incredible dish.

STEP 1: Gather your ingredients.

STEP 2: Cut your blanched, peeled tomatoes into quarters and place them in a roasting pan. Add you peeled garlic and basil. Sprinkle the oil and sugar over the tomatoes and roast at 170 degree C for 45 minutes.
STEP 3: Saute the onions until they are translucent.
STEP 4: Add the roasted tomatoes, garlic and basil to the pot along with the tomato paste and Worcestershire sauce. Cook for 1 minute then add the stock, bay leaves and seasoning. Simmer for 20 minutes.
STEP 5: Just before serving, stir in the cheese, allowing it to melt into the soup and then, using a stick blender, blend the soup to a smooth consistency.
