Addie staff in the kitchen: Mom’s home-made rusks

Traditional home-made rusks for the whole family to enjoy.

STEP 1: Gather all your ingredients.

Ingredients: 

• 1.5kg self-raising flour

• 500g sugar

• 15ml baking powder

• 15ml salt

• 375g corn flakes (slightly crushed)

• 200ml oil

• 500g margarine or butter

• 500ml buttermilk

• 3 eggs

 

STEP 2: Mix all the dry ingredients in a large bowl.

 

STEP 3: Add the butter and rub into dry ingredients: If your margarine or butter is not room temperature (like mine) grab a grater and grate the block into the bowl. Works wonders.

 

STEP 4: Whisk oil and eggs together and mixed and then add the buttermilk and mix.

 

STEP 5: Make the dry ingredients into a little dam and add buttermilk mixture. Gently mix (you’ll need your hands for this) the wet ingredients with the dry until combined.

 

STEP 6: Once the dough is properly mixed, roughly divide in half, this makes it a little easier to gauge the quantity.

 

STEP 7: Roll into small balls and pack tightly against each other. Put in oven for about 40 – 45 minutes at 180°C.

 

STEP 8: When cooled down, use a fork and ‘stab’ along the lines to break off individual squares.

 

STEP 9: Break square in approximately four pieces, and pack on baking tray. Put in oven at 70°C for about six to eight hours or overnight. Make sure the oven is low, otherwise you will burn the rusks to a crisp.

Note: Make sure the rusks are completely dried out before removing them from the oven or they will get moldy.

 

STEP 10: Serve and enjoy! Best when dunked in steaming cup of coffee!
