Springs Addie staff in the kitchen: Quick-bake, low-carb brownies

This is a recipe for gooey-chocolaty goodness without the added sugar. It's a low-carb, high-fat alternative to those who are Banting or just watching their carb intake. Try it!

Recipe makes eight to 10 brownies with four carbohydrates per square. Note: Although they are low-carb, they are also high in fat.

Ingredients:

STEP 1: Gather all the ingredients you will need before starting. This keeps you from running around the kitchen looking for stuff. Preheat the oven to 180°C.

(For brownies) You will need: 

• 1 cup of almond or pecan nut flower

• ½ cup of cocoa powder

• 1 teaspoon baking powder

• ½ teaspoon bicarbonate of soda

• 3 tablespoons xylitol (you can use 3 tablespoons of sugar if preferred)

• 2 eggs

• 7 tablespoons fresh cream

• 4 tablespoons melted butter

(For chocolate mousse to add on the side) You will need:

• 1 cup fresh cream

• 2 tablespoons cocoa powder

• 1 tablespoon xylitol (or 1 tablespoon of sugar)

• 1 teaspoon vanilla essence

BROWNIES:

STEP 2: Measure out your ingredients.

 

STEP 3: Get a mixing bowl.

 

STEP 4: Mix all the DRY ingredients together.

 

STEP 5: In a different mixing bowl, beat all the wet ingredients together.

 

It should look like this.

 

STEP 6: Add the wet ingredients to the dry ones and mix thoroughly.

 

STEP 7: Spread evenly into a square or small baking tray. Put into oven for 8 – 10 minutes. (Note: If you like them a little more moist, 8 minutes will do.)

CHOCOLATE MOUSSE:

STEP 8: While your brownie mixture is in the oven, gather the ingredients for the mousse.

 

STEP 9: Whip all the ingredients together.

 

Whip until mixture is firm and fluffy, forming soft peaks.

 

STEP 10: Retrieve your brownies from the oven. Let the brownies cool down before cutting to avoid a crumbling mess.

 

STEP 11: When cooled down, cut into straight, equal squares (or you can be a little creative with your straight lines like I was).

 

STEP 12: Serve and enjoy!
