Moroccan inspired chicken with lemon and olives
Perk up your chicken with these exotic North African flavour combinations.
Ingredients
- 1 chicken, cut into pieces
- 2 onions, chopped
- 3 cloves garlic, crushed
- 1 bunch fresh coriander, chopped
- 1 bunch fresh parsley, chopped
- juice of 1 lemon
- ½ tsp ground cinnamon
- ½  tsp ground ginger
- 1 tsp paprika
- 200g green olives, destoned
- salt and pepper to taste
- 3 Tbls olive oil
Method
- In a large saucepan, sauté the onion in olive oil for about 5 minutes. Add the chicken pieces and brown.
- After 10 minutes add the garlic, half the coriander, half the parsley, salt and pepper. Stir and let the flavours combine. Add the lemon juice, cinnamon, paprika and olives.
- Cover and cook over a low heat for 30 minutes, adding a little hot water if necessary.
- Sprinkle the rest of the coriander and parsley over the chicken and serve with preserved lemon and couscous.
