INGREDIENTS
- 1.5kg butternut, cubed
- 3 onions, chopped
- olive or avocado oil, for frying
- 2 green apples, cored and diced
- 30ml curry powder
- 750ml milk
- zest and juice of 2 oranges
- 30ml sugar
- handful coriander, chopped
METHOD
- Preheat oven to 220°C. Spread the butternut and onions on a baking tray. Sprinkle with oil and roast for about 30 minutes until cooked. Mix in the apples and curry powder. Season.
- Blitz the roasted veg, milk, orange zest and juice and sugar together. Season and add the coriander.
- Serve with crusty bread.
