RECIPE: Enhance your meals with homemade Chakalaka

Chakalaka is a scrumptious, spicy traditional South African salad made from an assortment of vegetables.

Easy to make, and ideal for both vegetarians and meat lovers.

Prep time: 10 minutes

Cooking time: 25 minutes

Serves: 5 people

 

Ingredients

  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 3 T curry powder
  • 3 T olive/vegetable oil
  • 1 onion finely chopped
  • 2 cloves of chopped garlic
  • 60g ginger, finely grated
  • 3 green chillies chopped (to taste)
  • 6 large carrots, grated
  • 2 T tomato paste
  • 300g can chopped tomato
  • 3 spring thyme/ leaves
  • 500g baked beans
  • Salt and black pepper

 

Directions

  1. In a saucepan, heat the oil and fry the onion until soft and tender but not brown.
  2. Add garlic, chillies, ginger and stir until well blended.
  3. Add curry powder and stir.
  4. Add all the colourful pepper slices and stir for 3 minutes until they are tender and well cooked.
  5. Add the grated carrots and stir until its well combined and all the curry powder has coated all the vegetables.
  6. Add the tomato paste and stir until its well cooked and well mixed.
  7. Remove the pot from the heat and add baked and fresh thyme, add black pepper and salt to taste.
  8. Serve hot or cold.
