Loadshedding Survival Kit – Dinner in the dark?

TAKE note of this power-free meal idea. (Serves 2)

  • 2 cans of mixed beans, rinsed
  • 1 bunch of chopped spring onions
  • 1 red pepper
  • 4 chopped gherkins
  • 1 handful of capers
  • 2 cans of tuna in salt, drained
  • 1 dash of fresh dill
  • 1 drizzle white balsamic vinegar
  • 1 drizzle olive oil
  1. Drain and rinse mixed beans
  2. Add spring onions, peppers, gherkin, capers and tuna
  3. Add dill and dress with white vinegar and olive oil.
