What’s for dinner? Lemon and herb chicken

 For those of you who’ve discovered the sheer joy of a pressure cooker … this one’s for you. A lemon and herb chicken which is the perfect mid-week dish, but delish enough if you having friends over for dinner on the weekend. 

We’ve been playing with pressure. And winning! With a little prep (which you can do well in advance), this dish takes less than half an hour to cook. 

You’ll need: 400g chicken drumsticks; 12ml Limoncello; pinch of salt and black pepper; 8g honey; 120g onion, peeled and thickly sliced; 60g carrots, peeled and diced; 80g canned chickpeas; one slice lemon; 10g butter; 30ml each chicken stock and white wine; a sprig of fresh thyme   

How to:  

Mix chicken drumsticks well with limoncello, salt, ground black pepper and honey. Marinate for 2 hours or overnight. 

Put onion, carrot, chickpeas, lemon, butter, chicken stock and white wine into the Philips All-in-One cooker. Add the chicken drumsticks and thyme. Close and lock the lid.  

Choose your poultry, time and cooking method according to the instruction booklet, tap confirm and start cooking. Pressure release when finished, and when the pressure is completely released, unlock and open the lid, dish up and serve.
