Caramel and Cinnamon Popcorn
Ingredients:
For the caramel:
- 125g unsalted butter
- ½tsp salt
- 2tsp cinnamon
- 230g unrefined dark muscovado sugar
- ½tsp bicarbonate of soda
- 1tsp vanilla extract
For the popcorn:
125g plain popcorn, popped
The Method:
Step 1: Place your popcorn in a bowl and keep aside.
Step 2: Preheat your oven to 120°C.
Step 3: To make the caramel, melt the butter in a large pan until it begins to bubble.
Step 4: Add the salt, cinnamon and sugar stirring until the sugar dissolves and combines with the other ingredients.
Step 5: Lower the heat and leave to bubble gently for no more than 5 minutes.
Step 6: Remove from the heat and then quickly add the bicarbonate of soda and the vanilla extract.
Step 7: Stir quickly until combined and then pour over the popcorn.
Step 8: Mix together the popcorn and caramel until evenly coated.
Step 9: Pour the popcorn on to a baking tray, spreading out with a spoon and bake for 15-30 until crisp. Serve.
