Jazzed up chicken and rice

Want a delightful dinner that’s quick and easy to make? This jazzed up chicken and rice recipe should do the trick.
Ingredients:
- 1/2 cup finely chopped medium green onions (with tops)
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 cup uncooked long-grain white rice
- 1 punnet sliced fresh mushrooms
- 1 cup tomato pasta sauce
- 2 tbsp olive oil
- 2 tbsp red or yellow bell peppers (cut into strips)
- 2 cups shredded chicken
- 2 1/4 cups water
- 3 finely chopped cloves of garlic
- 3 tbsp fresh chopped parsley
Method:
- Cook rice according to the packaging instructions.
- Heat the oil over medium-high heat in a deep skillet then cook the mushrooms, bell peppers, onions and garlic. Stir frequently and remove from heat when the vegetables are tender.
- Stir the rice, pasta sauce, chicken broth and half of the cheese into the skillet. Cook over medium-low heat until the mixture is hot.
- Garnish with the remaining cheese and parsley.
