Amanda A-mangia: Chicken with lemon and olives

#Africaday: Try this delicious chicken recipe with its Moroccan inspired flavour combinations.

INGREDIENTS

1 chicken, cut into pieces

2 onions, chopped

3 cloves garlic, crushed

1 bunch fresh coriander, chopped

1 bunch fresh parsley, chopped

juice of 1 lemon

½ tsp ground cinnamon

½  tsp ground ginger

1 tsp paprika

1 preserved lemon

200g green olives, destoned

salt and pepper to taste

3 Tbls olive oil

METHOD

In a large saucepan, sauté the onion with olive oil for about 5 minutes. Add the chicken pieces and brown evenly.

After 10 minutes add the garlic, half the coriander, half the parsley, salt and pepper. Stir and let the flavours combine. Add the lemon juice, cinnamon, paprika and olives.

Cover and cook over a low heat for 30 minutes, adding a little hot water if necessary.

Sprinkle the rest of the coriander and parsley over the chicken and serve with preserved lemon and couscous.
