Spring is here and isn’t it just fabulous? To wake up to hear the birds tweeting is beautiful.

I’m loving the hot weather and of course I had to unpack all my summer clothing from the cupboards. Going through the clothes though, I thought I’d treat myself to a few new items and off I went to the shops.

Now, I know I’ve put on a couple of kilos over the winter months, but a whole size, no way! I swear the sizes are becoming smaller and smaller in the shops. I actually got a dress stuck somewhere between my boobs and my butt and was wriggling around in it for about five minutes before I managed to yank it off over my head! I went into the fitting rooms excited to be purchasing some new clothing and came out exhausted, looking like a scarecrow and furious that nothing I took into the fitting room fitted me!

In the end I did find a lovely dress, two blouses and a pair of high heeled sandals. So the outing wasn’t completely a waste of time.

Pandora’s Box

A delicious, easy to prepare dessert which will receive wonderful compliments from your guests. Serves six.

Ingredients

1 packet Tennis Biscuits

1 Cup of fresh cream (250 mls)

200 Milk

1 packet instant pudding (I use vanilla but you can ring the changes with chocolate or pistachio)

1 Bar of chocolate (whole nut is good)

Fresh or tinned fruit, well drained or glace cherries, soaked in brandy, and chopped nuts.

Method

Empty the cream and milk into a bowl and sprinkle the instant pudding over it, stirring lightly until mixed.

Spread a long piece of tinfoil (preferably the stronger one) on the counter and on it place three rows of five biscuits each (or six if you have any left), touching but not overlapping.

Carefully spread the now thickened Instant Pudding over the biscuits until all used. Put the fruit (or cherries and nuts) in a thin line along the middle row of biscuits.

Pick up both sides of the foil and bring the two outside rows of biscuits together to form a peak, making a triangular parcel.

Fold over the foil firmly along the top and at both ends to make a neat triangle.

Put in the freezer, removing when set and unwrap.

Place on a long platter, coat with melted chocolate and decorate with cream and extra fruit.
