30-minute meals: Easy lentil tacos with avocado cream

Lentils are the base for these vegetarian tacos topped with an avocado cream.

You will need:

  • Six tortillas.
  • One cup dried lentils.
  • Two and a half cups vegetable stock.
  • One cup tomato sauce.
  • One tablespoon taco seasoning.
  • One large avocado.
  • Two limes.
  • One teaspoon salt.
  • Two cups shredded cabbage.
  • One large tomato diced.
  • A quarter cup cilantro chopped.

What to do:

Bring stock, tomato sauce, taco seasoning and lentils to a boil. Turn heat to medium-low, cover pan, and simmer for 15 to 20 minutes, or until lentils are tender and liquid is absorbed.

While lentils are cooking, prepare the avocado sauce, by mashing the avocado with the juice of one and a half limes and salt. Use the remaining lime juice to drizzle the cabbage with. Also, char the tortillas.

To assemble, place a layer of cabbage on tortilla, top with lentil mixture, diced tomatoes, cilantro and a drizzle or dollop of the avocado cream.
