RECIPE: Greek Shortbread – with only 4 ingredients

Once you've tried these you just won't be able to stop!

This recipe is so quick and easy to make – enjoy them as they are, or add in a few almond niblets and bake a batch for Christmas gifts. Zhoosh them up by dipping one end into melted chocolate, or decorate with a cherry and some green sprinkles, or get creative with silver and gold dust (the edible kind)…

Here’s what you need:

  • 1 C butter (227g)
  • 1 C icing sugar
  • 1/2 C oil
  • 2-3 C flour

Here’s how it’s done:

  1. Mix butter and oil.
  2. Add sifted icing sugar.
  3. Mix in 2 C flour, slowly adding more until mixture comes away from sides of bowl, forming a soft ball.
  4. Roll into small balls and flatten slightly on a lightly greased baking tray.
  5. Bake at 180 degrees for 12-15 minutes till golden.
  6. Cool on rack.
  7. Store in airtight container.
