Recipe for all-in-one Vegetable Bake

Enjoy as is, or with chicken kebabs, grilled sausages or roast meats.

Ingredients (serves 6)
• 1 kg total, of any combination of frozen vegetables of your choice and preference
• 500 ml milk
• 80 ml sandwich mayonnaise spread
• 60 ml cake flour
• 250ml cheddar cheese, grated
• 250ml roughly crushed cheese and onion potato crisps

Method
1. Pre-heat oven on ‘grill’ setting.
2. Boil the vegetables in lightly salted water in a covered saucepan until tender. Pour off excess water. Pour in the milk and heat it around the vegetables.
3. Combine the sandwich spread and flour, and stir into the pot while stirring until the sauce thickens and comes to the boil. Check for seasoning, and then pour the mixture into an oven dish.
4. Combine the cheese and crushed chips and use to cover the top evenly.
5. Grill until the topping is golden brown.

Hints and Tips
Add in a pack of cooked chopped bacon and a large onion sliced in rings cooked together first, to turn this into a main meal.
