Amanda A-mangia: Lunch box frikkadel

Frikkadels are a quick, cheap and easy addition to your lunch boxes.

  • 500g minced beef
  • 1 medium onion, finely chopped
  • 1 cup soft breadcrumbs
  • 3 garlic cloves, crushed
  • 1 tsp ground paprika
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, finely chopped
  • Salt and pepper to taste
  • 2 eggs
  • 2 tbsp sunflower oil

 

  1. Combine all the ingredients and mix well.
  2. Form the meatballs by rolling portions into small balls and pressing down slightly to flatten them.
  3. Heat the oil in a non-stick frying pan and brown the meatballs on both sides (about 15 minutes).
  4. Reduce heat and fry until cooked.
