Recipe for Salmon Camembert Quiche

A delicately flavoured, scrumptious savoury tart suitable for many occasions.

Ingredients (Yield: 8 -10 slices)

250ml cake flour
125g margarine
250ml grated cheddar cheese
For the filling
1 can Pink Salmon, well drained and broken into chunks (418 g)
1 Camembert cheese round, thinly sliced into strips
1 bunch spring onions, finely chopped
3 large eggs
250ml cream
salt and freshly ground black pepper

Method

Combine these ingredients in a food processor until a firm ball of dough forms. Using your fingertips, pat it out into a 23 cm diameter tart plate.
Chill this base while pre-heating the oven to 180 ºC, and preparing the filling ingredients.
For the filling
Loosely but evenly, scatter the salmon chunks, cheese slices and spring onion across the chilled pastry base.
Lightly beat the eggs and cream together, and season generously before pouring this over the filling.
Bake for 40 minutes.

Hints and Tips
Serve warm or at room temperature
